Stirex Knives

Some twenty years ago, Heidi did a project for a researcher at the Univ. of Waterloo ... on assistive devices. One of the devices was a neat knife. It had a handle at 90 degrees to the blade. When the project was completed, Heidi got to keep the devices. (I guess that was her salary, eh?) For 20 years she's been devoted to that knife. Why aren't all knives made that way?
